材料:鲜奶油250克(我用的是安佳的)、糖水25克(白糖和水按1:1的比例煮到糖融化即可)、细砂糖50克、蛋黄4个、细砂糖50克、吉利丁片3片(我只剩2片半了)、马斯卡邦芝士250克、即溶咖啡30克、热开水250克、郎姆酒45克、手指饼干若干、可可粉适量。R4h6y}?)^9Ch

3、蛋黄加50克白糖隔热水打发至浓稠变白。

4、将糖水加热到120度左右冲入蛋黄糊中拌匀;将吉利丁片从冷水中捞出来,拧干水分,隔水加热到40度左右融化成吉利丁溶液,加入蛋黄糊中拌匀;将马斯卡邦芝士加到蛋黄糊中切拌均匀;稍稍放凉,加入郎姆酒拌匀;最后加入打发好的鲜奶油,切拌均匀成奶酪糊,这样,提拉米苏的幕斯液(奶酪糊)部分就做好了。
